If you’re not heading off abroad on holiday, you can still enjoy the fabulous flavours of summer… and feel like you’re on holiday in the comfort of your home and garden! This is what I’ve eaten this week and I’m definitely enjoying the wonderful flavours I associate with summer and I want you to enjoy them too!

Healthy & Nutritious Caesar Salad

I hate to break this to you but a traditional Caesar Salad is not always the healthiest choice! With just lettuce leaves as a base, there’s just not enough colour and vegetation to qualify and that’s without the white deep fried croutons or salty, often processed dressing it arrives doused in. Now, that’s not to say you can’t make our own, way more nutritious version and I can guarantee you’ll love it even more. RECIPE

Beetroot, Feta & Celery Salad

These ingredients work so well together; the sweet slightly harder texture of beetroot (vacuumed packed is fine) balanced with a soft, salty feta and the sharp celery taste. Then it’s a question of adding in plenty of colour and crunch; carrots, cucumber, tomatoes, avocado and walnuts. Option: replace the Feta with a strong Roquefort or blue cheese Drizzle with Balsamic vinegar and olive oil. No need for anything more than this with these strong flavours.

Nothing shouts summer more than Watermelon! This simple smoothie blends fresh, ½ small (very) cold watermelon with ginger (1 thumb size piece) and 1 lime (peeled and most of the white pith removed). That’s it!
