These ingredients work so well together; the sweet slightly harder texture of beetroot (vacuumed packed is fine) balanced with a soft, salty feta and the sharp celery taste. Then it’s a question of adding in plenty of colour and crunch; carrots, cucumber, tomatoes, avocado and walnuts.

Option: replace the Feta with a strong Roquefort or blue cheese

Drizzle with Balsamic vinegar and olive oil. No need for anything more than this with these strong flavours.
