This Chicken Fajita Feast meal is certainly in the “oldie but goodie” category but, as always, I’ve boosted it nutritionally so you’ve got a fun, tasty meal that’s ideal for sharing with family or friends, that’s also ready in under 30mins from start to finish.

There are so many ways of making the dishes, but here’s my way! Fresh, vibrant and highly nutritious #themayway! Serve with warm tortillas, preferably wholemeal.

This is also a great meal if you’re cooking for one…simply half the quantities or make it all up and you’ll have some great combos to eat all week. You can’t go wrong with a fridge of these delicious leftovers that are ready to grab when you’re pushed for time or inspo! It also works very well as a vegetarian option without chicken.

Absolutely no need to buy a shop-bought spice mix when you can make your own so easily:

Chicken Fajita Feast

Homemade Spicy Chicken


  • 2-3 chicken breasts cut into thin strips
  • 1 tsp tomato puree
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp garlic salt
  • 6 tbsp rapeseed oil
  • Salt & Pepper

Marinate the chicken…the longer the better but you can use it immediately if you’re pushed for time. Lay out the chicken strips on a large baking tray and bake for 10-15mins at 180 degrees or heat a non-stick frying pan and slowly fry the chicken for 10mins until it is cooked. Remove and set aside.

Spiced Red Pepper and Onion Sauté

  • 2 red peppers, cut into strips
  • 2 medium onions, sliced
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper

Heat a little rapeseed oil in a frying pan and add the onions. Cook over a gentle heat for around 3-4mins before adding the peppers. Continue to cook for another 3-4 mins until they begin to soften. Now add the paprika, cumin, salt and pepper and cook for a further 2-3 mins. Turn off the heat and allow the flavours to infuse before serving.

Homemade Guacamole

  • 1 avocado
  • 1/2 small red onion, finely chopped
  • Juice ½ lemon/lime
  • 1 tbsp greek yoghurt
  • 1 green chilli, finely chopped
  • 1sp ground cumin
  • Salt & pepper

Combine all the ingredients and adjust for seasoning. This can be made in advance.

Homemade Tomato Salsa

  • 1 large handful cherry tomatoes (or whole), finely diced
  • 1/2 small red onion, finely chopped
  • Juice ½ lemon/lime
  • 1 small clove garlic, finely chopped
  • 1 small bunch fresh coriander, finely chopped
  • 1 red chilli, finely chopped
  • 1sp ground cumin
  • Salt and pepper

Combine all the ingredients and adjust for seasoning. This can be made in advance.
