These cute courgette rolls make a great starter, nibble or beautiful canapé to impress your guests and of course, they’re also very healthy! They may look fiddly but they are in fact very easy to put together; the most time consuming part is grilling the courgette strips, which can be done easily on a griddle pan or a non-stick frying pan.
To make these Stuffed Courgette Rolls, you’ll need….
- 2 large courgettes, sliced into 2mm strips using a cheese slice or vegetable slicer/mandoline
- 1/2 red pepper and 1/2 yellow pepper, sliced into very thin 2 cm lengths
For the filling
- Make up a batch of Cumin and Garlic Hummous (or alternatively use 1 tub of shop-bought)
- 100g sunflower seeds
- Fresh Lemon juice to taste
Here’s how..
- Griddle each courgette strip carefully on both sides without using any oil. Set aside and allow to cool
- For the filling, blend the sunflower seeds into a flour and then add 4 tbsp hummous to form a smooth paste
- Season to taste with extra lemon juice, salt and pepper
- One by one, lay out each strip and spread a thin layer of the sunflower seed paste
- Layout 4 small strips of peppers; 2 of each colour so half is set on the strip and half sits above
- Starting at one end, carefully roll the courgette strip all the way to the other end. Remove and stand on a serving dish with the pepper strips sticking out from the top
- Repeat for the remaining courgette strips
