Yes, homemade!! Absolutely no need to buy a shop-bought spice mix when the marinade for these healthy chicken fajitas is this easy and tasty! A perfect midweek meal that you can prepare ahead and put together so easily when you’re ready to eat.
You’ll need:
Serves 4
- 2-3 chicken breasts, halved widthways and cut into thin strips
- 2 peppers; red/yellow/green, sliced
- 1 large onion, sliced in thin wedges
- Salt & Pepper
- Chilli flakes
Healthy Chicken Fajita Marinade:
- 1 tbsp tomato puree
- 1 tbsp dried oregano
- 1 tsp smoked paprika
- 1 tsp garlic salt
- 6 tbsp rapeseed oil
- Salt & Pepper
Combine the marinade ingredients in a large bowl and add the chicken. Mix well and allow to marinate…the longer the better but you can use it immediately if you’re pushed for time.
Heat a little oil and saute the chicken strips over a medium/high heat until they are cooked. As they are thin, this should take around 5mins. Remove and set aside.
Once the chicken is cooked, add the peppers and onions and saute over a medium/high heat, seasoning with salt and pepper for 3-4mins, until they are soft.
(Alternatively, if you prefer to use the oven, lay out the marinated chicken strips on a large baking tray and bake for 10-15mins at 180 degrees. Put the onions and peppers in a large bowl and toss in some oil, season with salt and pepper and chilli flakes and lay out on a separate tray. Bake at the same time as the chicken. Remove once cooked and set aside.
Meanwhile, prepare the trimmings; grated cheese, guacamole (preferably homemade; try this easy guacamole recipe) diced tomato and onion salsa (with garlic, lemon juice, olive oil and finely chopped coriander), sour cream and shredded lettuce. You can choose all or just one or two; that’s the beauty of this meal, you can make it as elaborate or as simple as you wish!
Serve with warm tortillas, preferably wholemeal. Healthy chicken fajitas in minutes!
