To make these delicious Halloumi Kebab Skewers, you’ll need:
- 2 blocks of Halloumi cheese, cut into large cubes
- Vegetables (vary as you wish):
- 2 red/yellow/orange peppers, cut into large squares
- 2 medium courgettes, cut into thick slices
- 2 medium red onions, cut into thick wedges
Halloumi Kebab Marinade
- 8 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp red wine vinegar
- 2 cloves garlic, crushed
- 2 tsp dried oregano
- 1 teaspoon fresh mint leaves, finely chopped
- Salt and pepper
Make up the halloumi kebab marinade and brush it over the kebabs just before cooking. Alternatively, toss the vegetables in the marinade before making up the skewers.
Plus of course, you’ll need some skewers! Metal or wooden both work well.
TIP: If you’re using wooden skewers, soak them in water beforehand to avoid them burning on the BBQ/Grill.

What is Halloumi?
This “squeaky”, salty cheese is often overlooked if you’re not familiar with it but you’re missing out! Halloumi is a semi-hard cheese, originally from Cyprus, typically made from the milk of goats, sheep, or cows. It has a slightly tangy, salty taste and is firm and chewy straight from the packet but is particularly good once it’s cooked; it takes on a much softer texture and tastes incredible!
With a higher melting point than many other types of cheese, it works very well baked, grilled, or fried without losing its shape.
