This tasty vegan ramen or Asian Noodle Soup is quick and to put together and with the crispy garlic and ginger topping, it’s incredibly flavoursome. This is a perfect warming and wholesome midweek meal that you can have ready in no time.
To make delicious Asian Noodle Soup, you’ll need:

- 2 tbsp miso paste
- 500ml water
- 2-inch piece fresh ginger, grated
- 4 garlic cloves, finely chopped
- 1 small red chilli, finely chopped
- 3 tbsp sesame oil
- 1 tbsp light soy sauce
- Handful peanuts
- 2 bundles of soba or brown rice noodles
- Vegetables – 1 handful
- sugar snaps
- mangetout
- beansprouts
- 2 whole bok choy
- 4 spring onions
- Fresh coriander leaves, roughly chopped
- Lime wedges
Here’s How…
Heat 1tbsp sesame oil and gently sauté the garlic, ginger and chilli all at once. Do not allow it to burn, stirring often until they are golden and crispy. This should take around 10mins. Set aside.
In a wok or large frying pan, heat the remaining sesame oil and then quickly stir fry the vegetables; start with the bok choy before adding the sugar snaps, mangetout and then finally the beansprouts. Add the soy sauce and stir fry until they are softened but still crunchy; around 3-4mins.
At the same time, bring the water to a boil in a large saucepan, reduce heat and add the miso paste. Stir to dissolve and bring to a simmer. Add the noodles and cook for 5mins (or as per packet instructions). Remove the noodles with tongs and set aside. Allow the broth to continue to simmer gently.
Finally, in a separate frying pan, heat and then dry fry (without any oil) the peanuts, stirring continuously for a few mins until they are slightly toasted. Set aside
Now build each bowl separately; start by dividing the noodles into each bowl as a base. Then add half the vegetables to each bowl and then ladle the hot broth over until they are just covered.
Top with the toasted peanuts and the crispy garlic/ginger/chilli mixture and finally garnish with the spring onions, coriander (if using) and a squeeze of lime.
